¿De dónde procede el amonio y amoniaco en biofloc?
En peces y camarones como producto final del catabolismo de las proteínas que ingieren del alimento, se genera amoniaco (NH3). La mayor parte del amoniaco se convierte en amonio (NH4+) inmediatamente después de ser expulsado al agua. Tanto para tilapia como para camarón, entre un 70 y 90% del amoniaco es expulsado por las branquias. Las moléculas de amoniaco en contacto con agua atrapan protones (H+) que se encuentran libres y se convierten en moléculas de amonio (NH4+).
¿Qué es el TAN en acuicultura simbiótica: Biofloc?
El TAN significa por sus siglas en inglés: total ammonium nitrogen, (nitrógeno amoniacal total). El amonio, pasa de manera instantánea a amoniaco y el amoniaco a amonio de nuevo. Estas reacciones se dan en ambos sentidos y dependen de la cantidad de protones presentes en el agua. De manera que el TAN en realidad, es la medida conjunta de la cantidad de amonio y amoniaco en biofloc. El agua contiene protones (H+) libres y la medida de la concentración de protones es precisamente el valor de pH. Cuando un valor de pH es bajo significa que hay muchos protones en el agua y viceversa.
¿Qué miden los medidores, amonio o amoniaco?
La mayoría de los test comerciales se basan en el método del indofenol o de Nessler. Ambos métodos tienen como principio realizar el análisis en condiciones extremadamente alcalinas, es decir sin presencia de protones. De esta manera todo el amonio (NH4+) existente en el agua pasa a amoniaco (NH3) y luego mediante un reactivo que colorea el amoniaco se mide este último, tanto el que ya estaba presente en el agua, como el que se convirtió a amoniaco a partir de amonio mediante al subir el pH. De esta manera se puede decir que como todo el nitrógeno del agua en esas condiciones alcalinas está en forma de amoniaco y se mide como tal, la concentración de TAN es igual a la concentración de amoniaco. Así pues la mayoría de test y espectrofotómetros arrojan una medida de TAN.
¿Cuánto TAN puede generar un cultivo con tecnología biofloc?
Durante un ciclo completo de camarón que puede durar aproximadamente 100 días, puede llegar a acumularse aproximadamente 76,37 mg de TAN por litro o lo que es igual a unos 155 kg de TAN en todo el tanque al final del ciclo. En tilapia puede ser aún mayor puesto que existe más biomasa pudiendo acumularse aproximadamente 134,06 mg de TAN por litro o lo que es lo mismo 234 kg de TAN en todo el tanque al final de ciclo. Estas cantidades de TAN sobrepasan extraordinariamente los niveles límite, siendo concentraciones letales para el animal. (Datos ofrecidos por Dr. David Celdrán. ¿Qué efecto tiene los bioflóculos sobre el amonio y amoniaco?
Sin embargo, los bioflóculos o coloides generados con la tecnología biofloc o aquamimicry retiran tanto amonio como amoniaco oxidándolo a substancias menos tóxicas como nitrito y nitratos. Por otra parte existe una retirada de amonio por parte del fitoplancton del biofloc y aquamimiry que absorbe estas substancias como aporte de nitrógeno. Por todo ello, en un cultivo realizado con tecnología biofloc o aquamimicry los valores de TAN se mantienen por debajo de 1,5 mg/L sin necesidad de realizar ningún recambio de agua. Tan solo es necesario mantener un adecuado equilibrio C:N y asegurar la presencia de bacterias nitrificantes.
¿Cómo saber la fracción de amonio y amoniaco contiene el valor de TAN medido?
Una vez se comprende que en el agua el valor de TAN es en realidad una fracción de amonio y otra fracción de amoniaco, ¿cómo saber cuánto de ese valor que el espectrofotómetro arroja de TAN es amonio y cuánto amoniaco?. Pues la clave está en el pH y la temperatura. La concentración de protones existente en el agua (pH) hará que el amonio se transforme en amoniaco o viceversa. La temperatura aumentará la velocidad de esa reacción.
¿Y cómo calcular el porcentaje que hay en el agua de cada uno?.
Para ello es necesario conocer el valor de TAN, de temperatura y de pH del agua. Primeramente hemos de conocer qué porcentaje de amoniaco hay a una temperatura y pH concretos. Para ello existen tablas como la que mostramos a continuación:
De esta manera, si por ejemplo tenemos un valor de pH de 7.8 y 28 ºC de temperatura, el porcentaje de amoniaco (NH3) del TAN que tengamos para esas condiciones será 4.23%
Si nuestro valor medido de TAN es por ejemplo 1mg/L, a ese pH y esa temperatura en realidad tendremos 0.0423 mg de amoniaco/L o amonio no ionizado y 0.957 mg de amonio (NH4+).
Con este simple ejercicio podemos conocer de manera exacta qué porcentaje o fracción del TAN es amonio y cual es amoniaco.
Conocer qué cantidad de amoniaco hay en Biofloc es lo importante
La toxicidad del amoniaco es mucho mayor que la toxicidad de amonio, en orden de entre 200 y 300 veces más. Por esta razón, conocer cuánto amoniaco tenemos es vital. Un mismo valor de TAN a distintos valores de pH, temperatura y también salinidad puede ser letal para nuestros organismos.
Los niveles de amoniaco letales para tilapia (Oreochromis sp) son a partir de 0.6 mg/L,. A partir de esta concentración de amoniaco los efectos en tilapias pueden ser letales (El-Shafai et al 2004), (Bravo y Nelson 2007). En camarón (Litopenaeus vannamei), se estima que el nivel seguro se encuentra por debajo de 0.16 mg/L de amoniaco para una salinidad de 25 psu (Lin & Chen 2001). La toxicidad del amoniaco en camarón también es dependiente de la salinidad. A mayor salinidad, menor efecto tóxico tiene sobre el organismo.
Conclusiones
De esta manera podemos ver que para entender realmente el valor del TAN es necesario conocer el pH, la temperatura y la salinidad. Del valor de TAN podemos calcular la concentración de amonio no ionizado (NH3) el cual es la substancia relevante puesto que es muy tóxico. De esta manera podemos tomar decisiones cruciales en el manejo del cultivo. Para reducir el amonio y amoniaco en biofloc es necesario conocer cómo funcionan las tecnologías simbióticas Biofloc y Aquamimicry.
